The taste of rose petals combined with pistachios makes for a celebration on the palette. Pistachios are a nutrient-dense nut packed with antioxidants, fiber, healthy fats, and essential vitamins like vitamin E and B6, and rose petals add a subtle floral flavor and can provide additional antioxidants and potential anti-inflammatory properties, making it a healthy snack.
Makes 12 -15 bite size balls

½ cup raw, shelled pistachios
¼ cup raw, cashews
10 medjool dates
1 ½ tsp pure vanilla extract
1 to 1 ½ tsp pure rose water
1 ½ tsp cardamom
1 tsp ceylon cinnamon
½ tsp pink salt
¼ cup raw, shredded, unsweetened coconut and ½ cup extra to roll the balls
¼ cup edible rose petals and ½ cup extra to roll the balls
1 tsp coconut oil or ghee
Method:
In a food processor, chop the nuts to a fine texture of your choice
Remove the nuts and place in a large mixing bowl
Chop dates and add to food processor, add oil / ghee and blend well until it sticks together
Add the dates and remaining ingredients to the nut mixture, until well combined with your hands.
In a shallow dish add ½ cup shredded coconut and ½ cup rose petals, mix together.
Make bite size balls to your liking and roll into a mixture of rose petals and shredded coconut.
Place the rolled balls in a covered dish and place in the refrigerator for 30 mins to an hour to firm. Store in a sealed container. EnJOY!
Note: if you have a large food processor, combine all ingredients together until the mixture is sticky and well blended to make the balls.
