Birthday Heart Cookies



These cookies are delightful with chai or any hot beverage. They are mildly sweet and savory with just a hint of spice. A favorite cookie to make and the heart shape makes me happy making and eating it!


ORGANIC INGREDIENTS. Makes 12 cookies

  • 2 cups blanched almond flour (available at your local grocery store or online).

  • 1/4 cup coconut flour or gluten free flour

  • 2 -3 tsp ground cardamon to taste

  • 1 tsp cinnamon

  • 1 tsp baking powder

  • 1/8 tsp pink salt

  • 1 1/2 tsp pure vanilla extract

  • 1/4 cup jaggery or rice malt syrup or maple

  • 1/4 cup ghee or refined coconut oil

  • 1 egg or Flax egg ( 1tbsp flaxseed meal + 3 tbsp water). Let sit for 15 mins to thicken.

  • 1-2 inch heart shaped cookie cutter

Cardamom, Cinnamon


Method

  1. Preheat oven to 350 F.

  2. Line a large baking sheet with parchment paper.

  3. In a mixing bowl, add the first five dry ingredients. Set aside.

  4. In another deep bowl, add the remaining wet ingredients.

  5. Stir the dry into the wet mixture with a spatula until all blended.

  6. Roll out the dough and using the heart shape cookie cutter, press into shape.

  7. Place on the cookie sheet, couple inches apart and bake for 12-15 mins.

  8. Cool completely before consuming.


Tip: If any nut allergy, omit the nut flour and use flour of choice and measure accordingly
