Got to Love Mango Salad

This is the perfect fruity salad to pair with a main entree or as a deliciously satisfying snack. The salad is healthy and naturally refreshing - tangy and sweet, creamy with a light crunch and a touch of spice. It contains vitamins C, K, E, and folate.

Ingredients. Use organic and local when possible, makes 4 servings

  • 2 ripe mangoes.

  • 1 medium slightly firm avocado.

  • 1 Persian or half of an English cucumber.

  • 1 tbls. extra virgin quality olive oil.

  • 1 lime, freshly squeezed.

  • 1/4 tsp. of mineral salt.

Digestive spices

  • 1/4 tsp. ground paprika.

  • 1/4 tsp. ground cumin.

  • 1/8 tsp. cayenne.

  • 1/8 tsp. oregano.

  • Garnish with chopped cilantro.


  1. Wash and chop the first three ingredients into bite size pieces. Set aside in a bowl.

  2. Prepare the dressing in a separate bowl - whisk the olive oil, lime, salt, paprika, cumin, cayenne, and oregano.

  3. Assemble the chopped ingredients onto a plate.

  4. Drizzle the dressing generously and garnish with cilantro.
